Sassa is seeking apprentices who wish to pursue the path of a craftsman.

Looking at ingredients. Sharpening knives. Making dashi. Working with heat. Keeping the tools and kitchen in order. Through these daily tasks, apprentices develop both skill and the ability to think and judge independently.

Preparing staff meals and eating together are also part of training.
