What it means to cultivate a craftsman.
Cultivating Craftsmen
At Sassa, we do not seek to cultivate people who simply follow prescribed steps. We seek craftsmen who can look at ingredients, think, and make their own judgments.
Alongside technique, we value learning how to face the work itself.

The Work of Every Day
Ingredients, knives, dashi, heat, tools, cleaning, and order. As these daily tasks are accumulated one by one, the ability to observe and think grows.
The care given to the work in front of you determines the precision of the work that follows.

Eat Together, Learn Together
Preparing staff meals and eating the same food together are also part of training.
Gathering around the same meal and reflecting on the day’s work allows us to share how we face cooking.

Future Apprentices
When apprentices join, we will introduce the first apprentice and second apprentice through the work each is accumulating day by day.
